Recipe: Scotch Eggs

1 lb ground sausage
5-6 boiled eggs (cold)
Panko crumbs
Salt
Pepper
Garlic powder
Onion powder
Oil- if frying

Dry off your lovely boiled eggs

In a bowl get your Pablo crumbs ready to roll your eggs in ( later). You can season if you like, but you'll season the sausage.. Set aside. 

Get you sausage out, and mix in your seasonings to taste- we like a wee bit of smoked salt: 


Divide the sausage up into balls for each egg. If your eggs are small go 6, larger, do only 5. 

Take a sausage ball and flatten it in you palm. Put an egg in the center and squish the sausage around it so the egg is covered. Should look like so:


Roll the egg /sausage ball in your Panko crumbs., set in a pan to bake, or till you are ready to fry. 


Bake at 350 or deep fry till sausage is cooked through and outside is nicely browned. I deep fry about 4 min in oil that's 350 degrees then finish off in the oven a bit while we finish the rest of brekkie.

They refrigerate well for school on the go breakfasts..
