Danish Apple Coconut coffee cake/muffins

I remember my mom making this when I was a kid.. Love it so much!! She made it in a cake pan, I made muffins so the kids can grab and go.. Freezes really well and super easy to make. Note: real butter makes it so much better!



   Danish Apple Coconut Coffee Cake

    3/4 c. margarine                                  
 1/2 c. cold  milk
    1 c sugar                                              
 1  1/4 c. shredded coconut
    3 eggs                                                   
2 lg tart apples, peeled and diced
    1  1/2 c sifted flour                              
 1/4 sliced almonds
    2 t. baking powder                              
  2 T sugar
    1/4 t. salt

Cream margarine and sugar until smooth.  Add eggs and mix well.  Sift flour with salt and baking powder
and add to creamed mixture alternately with milk.  Blend until smooth.  Stir in coconut, then fold in apples.
Pour into well greased 9 x 12 baking dish.  Sprinkle with almonds, then 2 T sugar.  Bake at 350 degrees for
30-35 minutes.

(After peeling & dicing apples dip them in lemon juice to maintain their light color.)

Pumpkin pudding and hummingbird cake

Home made baking mix, lemon scones, banana muffins

From Living magazine:

-3 T sugar
-2T + 2t baking powder
-1T + 1t salt
-6 c AP flour ( or 4 c AP and 2 c whole wheat)
-2 sticks frozen butter, grated 


Store refrigerated 1 month, freezer 3 months


Lemon scones
-2 c baking mix
-1/4 c sugar
-1/2 t lemon zest
-1/2 c heavy cream ( more for brushing)
-1 large egg
- coarse dusting sugar

Mix sugar, baking mix, and lemon zest

Separately mix egg and cream. Stir into flour mix until dough forms. 

Pat into a 6" round on parchment paper lined baking sheet. Brush top with cream and dust with coarse sugar. Cut into 8 wedges, pull slightly apart.

Bake 20 min at 375.

Banana muffins

2 1/4 c flour mix
2/3 c sugar + extra for dusting
1/4 t cinnamon
1 c mashed banana 
1/2 c milk
2 eggs

Mix all dry ingredients

Stir in wet ingredients

Fill 12 muffin cups 2/3 full each. Sprinkle with extra sugar. Bake 22 min or till done at 350 degrees.

These would be great with chocolate chips, nuts, raisins, or dried fruit...
