Fajita seasoning:
1 t chili powder
1/2 t paprika
1 T cornstarch
1-2 packets chicken bullion powder
1 t sugar
1 t onion powder
1 t garlic powder
Salt
Pepper
Fajitas:
1 sm onion, diced
1 sm shallot, diced
2-3 cloves garlic, chopped
Sautée onion, garlic, shallots in a little olive oil. Add in pork, sprinkle in a couple teaspoons of the above seasoning mix. I brown it a bit and then add some water ( about a cup) and let it cook down. It'll make its own tasty sauce.

Serve on tortillas with:
Lettuce
Tomatoes
Avocado
Black or refried beans
Shredded cheese
Sour cream
Lime for a squeeze if you like that
Fresh Cilantro if you like that too
